How to Cook Eggs Over Easy

"Over easy" is one of the fastest methods for cooking eggs. There is the potential for a mess, however, if the process is not performed correctly. When eggs over easy are cooked properly, the cooking time is short and the yolks are left runny.

  1. Step 1

    Start with a pan that either has a non-stick coating or has been sprayed with a non-stick spray. If the eggs stick to the surface of the pan, it will not be possible to cook eggs over easy properly.

  2. Step 2

    Crack as many eggs as you wish into the pan. Let them fall as they may into the pan and don't attempt to break the yolks or move them around too much. The yolks should remain intact. If the white part runs too much for your taste, use a spatula to push the white closer to the yolk.

  3. Step 3

    Slide the eggs around in the pan by shifting the pan slightly. If the whites are solid and they appear to be sufficiently cooked, you can flip the eggs over.

  4. Step 4

    Slide the pan quickly with an upward motion on one side in order to flip the eggs. They should flip quickly and with little effort if the pan is sufficiently coated or sprayed. Once the eggs land on the yolks, allow that side to cook for a few seconds. This cooks a thin layer of egg white over the yolk which will hold the yolk in place. If the yolk is still runny inside its egg-white bubble, the eggs are properly cooked over easy.
