Step 1
Start out small. You want to gradually reach the ideal temperature for cooking ribs on the grill. Therefore, keep the number of coals that you first add on the small size. If you need more, you can add them in as you cook.

Use the vents on the grill to control the temperature. Your grill should have two vents you can use to control the heat and smoke of the grill's fire. To get the grill hotter, you open the bottom vent wider. To reduce the amount of smoke in the grill, the top vent is opened more.

Keep the dome closed. If you open the dome when cooking, the temperature drops dramatically. Only open the dome when it's completely necessary and you suspect that the food is cooked.

Leave the grill alone once it reaches the ideal temperature. Once you reach a steady temperature, there is no need to adjust the vents or the amount of charcoal that you put in the grill.
