How to Grill Zucchini on a Gas Grill
Every summer, it's the same story-your neighbor has a bumper crop of zucchini, and you are the recipient of a bushel or two of the vegetable. Instead of the usual zucchini bread, cook it the easy way-on a gas grill. Does this Spark an idea?

Rinse and dry the zucchini and cut off the ends. Leaving the skin on, slice the zucchini lengthwise, then cut in half again. Or, cut into slices 1/2-inch to 5/8-inch thick, making sure all of the slices are the same thickness so they will cook evenly.

Sprinkle the zucchini with olive oil, so that the slices are coated evenly on both sides. Or, soak in a marinade of your choice in a zip-top bag for four or more hours.

Heat the gas grill on low. With a paper towel, add a small amount of canola oil to the grills so the zucchini doesn't stick.

Place the zucchini on the grill with the tongs. After 2 1/2 to 3 minutes, check for grill marks. Turn it over and cook for 3 minutes more on the other side. The zucchini should be quite soft and have brown grill marks.

Remove the zucchini, sprinkle with salt and pepper and serve immediately.

Tips & Warnings
Forgo the marinade and serve the grilled zucchini with salt and pepper, crumbled feta and some sprigs of fresh mint.
Do not heat the grill too hot because the heat from gas grills can be too intense for vegetables.
Avoid grilling the zucchini for too long because it can get too soft. It should be tender when touched with a fork but still slightly crisp.
