How to Cook Larb (Laap)

Larb, pronounced Laap, is a Thai dish that comes from the Northeastern part of the country. It can be made with any kind of ground meat, beef being the most flavorful.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • One pound ground meat
  • Two to three limes
  • Three tbsp of fish sauce
  • Half of an onion
  • Green Onion
  • Cilantro
  • Chili pepper

Step1
Pan fry or boil your ground meat until it is cooked. Season with salt, pepper and some garlic powder.
Step2
Drain any excess liquid from meat, then place into mixing bowl.
Step3
Add the juice from the limes and fish sauce. Start out with a little of each and keep adding until you get to a taste that you like. Add either dried chili peppers or diced serano peppers a little at a time until you get to the desired level of spicy.
Step4
Add diced onion, sliced green onion and sliced cilantro to the mix. Some like to add a few mint leaves as well. Stir everything together with a "mashing" action. This will get all of the oils and juices mixed together nice.
Step5
Serve with vegetables like cabbage, carrots, lettuce or green beans. Best served on top of steamed rice!

on 6/23/2008 I add ground toasted rice...just a little, and use finely chopped kaffir limes leaves...or lime zest, since the leaves aren't something I always have on hand.
