make a delicious Steak with ease. just follow these steps

Difficulty: Easy
Instructions
  1. Step 1

    Choose your cut.
    Make your marinade -
    2 tbsps oil
seasoning of your choice (rosemary, pepper, oregano, etc...)
    2 cloves of garlic, minced
    1/4 onion, minced
(or just use 1/4 cup of your favourite Italian dressing instead of the oil and seasoning)
1/4 cup umeboshi vinegar - this is the most important part of this marinade (used in making sushi - quite salty, so you may not need any extra salt)
1/4 cup red wine, white wine, whatever you have handy

  2. Step 2

Give all the ingredients a good stir. Marinate for at least 15 minutes, 1/2 hour - 45 minutes if you have the time (espeicially if it is a cheap cut). Turn the meat at least once during this time. You will notice the meat turning somewhat grey. This is the acids and enzymes working on the meat.

  3. Step 3

Heat a pan to med-high. Add a couple of tablespoons oil. Quickly sear each side of the steak - approximately 30 seconds each side. A lot of sizzling and spitting will be taking place, so don't wear your nice clothes, or at least wear an apron!

  4. Step 4

Place steak on a broiler pan if you have one - if you don't, use a cooling rack for baking (you know, the wire ones) on top of a baking sheet. Bake in the oven at 300F for approximately 20 minutes for medium-rare.

The more fat you find marbled through the meat, generally, the more flavorful and tender the cut.

Tips & Warnings
  • In restaurants (where i live) they do not grill the steaks, but there is a trick to making them juicy as heck! Get your steak, make sure its at least 1 inch thick. Rub the steak with a cut clove of garlic. (do not put minced garlic on or it will burn and taste nasty) Then press LOTS of cracked pepper into both sides of the steak along with some sea or rock salt. Heat a pan up really well (on the stove) and drizzle olive oil over one side of the steak. When the pan is hot, flip the oiled side on. Drizzle oil on the other side of the steaks as they are in the pan. Sear all sides until it forms a nice brown crust. Place them both on a baking tray and straight in the oven. Bake until desired
