How to Make Cheddar And Broccoli Twice Baked Potatoes

Cheddar and broccoli potatoes are amazing, but they are even better when they are twice baked.

Instructions

Difficulty: Easy

Things You’ll Need:

  • Potato
  • Chopped or shredded cheddar cheese
  • Chopped Broccoli

Step1
Cook the potato all the way through. Leave the skin on.
Step2
After the potato is cooked all the way through, let the potato cool off so you can handle it and not burn yourself.
Step3
After the potato is cooled, cut off a thin layer off the entire top of the potato just enough so you have access to the insides of the potato. Don't cut the sides!
Step4
Using a small spoon, take out all of the potato insides, leaving only the skin shell behind. Leave the shell completely intact in its original form.
Step5
Put all of the insides of the potato in a bowl. Take as much cheddar and cut broccoli pieces as you would like and and put it in the bowl with the potato insides.
Step6
Either use a mixer or simply just mash everything together using a potato masher.
Step7
Take a small spoon and carefully put the insides of the potato back into the potato skin. When you place each spoonful in, press it down with the spoon.
Step8
Put in an oven until the mixture showing on the top of the potato is a nice light brown shade.
Step9
Wait until it cools, then enjoy!
