The amount of egg substitute as opposed to real eggs is as follows ~
One-fourth cup egg substitute = one whole egg
Three tablespoons egg substitute = one egg yolk
Two tablespoons egg substitute = one egg white

1/4 cup applesauce = 1 egg
2 tbsp corn starch = 1 egg
2 tbsp potato starch = 1 egg
1 tbsp soy milk powder, 1 tbsp cornstarch, 2 tbsp water = 1 egg
1 banana = 1 egg in cakes
2 tbsp arrowroot flour = 1 egg
1/4 cup mashed silken tofu = 1 egg

My personal favorite is using the applesauce in place of eggs, you can also use applesauce in place of oil in recipes. I have tried this myself and it does work great. It cuts out the fat while still makes my baked goodies nice, moist and tasty. Since the egg substitutes that you buy at the store are a bit pricey, using the homemade egg substitutes can really be a great alternative.
