How to Make Sicilian Peppery Pasta

Making pasta was never a specialty for me. I grew up eating spaghetti, pizza, and other Italian foods, but making them was a far cry from the norm. To tell you the truth, the first time I made this dish I was quite surprised by how it turned out. The sauce was frothy and thick. The pasta noodles were soft, but not limp. And the other ingredients made the pasta itself taste like it came from the Old Country. I have never made pasta like that since. But, I think the pasta recipe I am about to give you will come close. In this rendition of Pasta Familia, I present to you Sicilian Peppery Pasta.

  • Here are the ingredients that you need to make it: spaghetti sauce flavor with tomato and basil, angel hair blended with rotini and rigatoni, parmesan cheese, oregano, green, red, and yellow peppers,
  1. Step 1

    STEP ONE: CLEANING THE COOKING AREA

    Cleaning the cooking area keeps you from contaminating the people you plan on serving and keeps you from contaminating yourself. This means this job is very important. To do this properly, take a wet sponge or dishcloth, add some dishwashing liquid to it, and wipe down the stove, the burners, and the countertop. Next, wipe down the pots and pans you plan to use in your dish and wipe down any measuring cups, spoons, forks, knives, or ladles you plan on using to serve your guests. Make sure you use moderately warm to hot water. If the heat is too much, then use rubber gloves to protect your hands from the heat exposure. When the countertop, burners, pots and pans, measuring cups, spoons, and ladles are dry, place them on a large dishwashing towel. Now, it’s time to begin the cooking process.

    STEP TWO: THE COOKING PROCESS

    Take the cleaned pot and add water to the pot. Next, add garlic salt and one stick of butter or margarine. Next, place the pot on the burner. Wait three to five minutes until the water begins to boil, and then add the angel hair, rotini, and rigatoni. Cook until the noodles and pasta is soft. Do not overcook. It will make the noodles taste flat and make the pasta flat as well.
    Next, take another cleaned pot or pan and place this pan or pot on a burner. Add some olive oil to it. Do not add too much. It will make the vegetables soggy and ruin the flavor. Add shallots, onions, and garlic until the olive oil browns. Then, add green, red, and yellow peppers. As the mixture is cooking, add garlic salt, paprika, sage, and oregano. Let the mixture cook for at least five to ten minutes (and ten to fifteen minutes, if you want the peppers to be a little crispy). When the peppery mixture is done, cut off the pan.
    Now, take another cleaned pot and add the spaghetti sauce of tomato and basil to it. Place the pot on a burner. Add some butter or margarine to thin the sauce. Next, add some garlic, onions, oregano, and garlic salt to the sauce. Heat this sauce for three to five minutes. When the sauce is done, cut it off. With the peppery mixture, pasta done, and the sauce done, it’s time to add the three concoctions together.

  3. Step 3

    STEP THREE: PUTTING THE CONCOCTIONS TOGETHER

    Putting the concoctions together takes a little skill and a whole lot of effort. Simply find a cleaned bowl. Add the pasta to the bowl. Add a little garlic salt and paprika to the pasta. Shake the seasoning around until it covers the entire dish. Next, add the peppery mixture to the noodles. Add some garlic salt, oregano, and shallots. Shake the peppery mixture around the pasta until the two are completely merged. Next, take the spaghetti sauce and add it to the other two concoctions. Shake the sauce around until it mixes completely with the other two concoctions. Now, take a clean ladle and stir the mixture until it is finely amalgamated. Add parmesan cheese on top. Smell the finished dish. It is does not smell like garlic, paprika, or pepper then you did not add enough of your ingredients. If it does, congratulations! You have just brought the Old Country to your dinner table by making Sicilian Peppery Pasta.

Tips & Warnings
  • Make sure that you add enough ingredients to get the peppery taste that you want.
  • Be leery of adding too much ingredients.
  • Always drain the pots and pans of water and olive oil before you mix them together.
  • Do not turn the heat on the burners too high.
  • Too much olive oil makes the vegetables taste oily and bland.
  • Too much salt will make the pasta inedible.
