Things You'll Need:
- 2 1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon backing soda
- 1/4 teaspoon salt
- 1 cup vegetable shortening
- 2 eggs, beaten
- 1 tablespoon almond extract
- 1/4 cup blanched unsaulted almonds

Mix dry ingredients in a bowl

Cut shortening into dry ingredients with a fork or pastry cutter

Add beaten eggs and almond extract. Stir with a spoon until well mixed

Preheat the oven to 350 degrees

Shape dough into balls the size of a large cherry

Put on greased cookie sheet. Press an almond down in the center of each cookie
