How to Make a Date and Mixed Fruit Cake

This is a refreshing fruit cake that uses canned fruit for additional freshness. It is simple to make and tastes great.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1.5 cups (200g) mixed fruit
  • 2 cups (275g) dried dates, chopped
  • 15.5 oz/ 440g can fruit salad in natural juice
  • 1 cup (250ml) fruit juice (non-filtered apple juice is a good choice)
  • 1/2 teaspoon bicarbonate of soda
  • 2 cups (300g) self-raising/self-rising flour
Step1
Preheat the oven to moderate (350ºF or 180ºC).
Step2
Prepare a square pan with non-stick spray, oil or baking paper.
Step3
Boil the fruit, dates, undrained fruit salad and juice together for 10 minutes. Allow to cool for 5 minutes.
Step4
Add sifted bicarbonate of soda and flour.
Step5
Pour the mixture into the pan and spread across evenly.
Step6
Bake for 1 hour or until cooked. The cake is cooked when a skewer comes out clean.
Step7
Allow to cool in the pan.
