Difficulty: Moderately Easy
Things You’ll Need:
- 1.5 cups (200g) mixed fruit
- 2 cups (275g) dried dates, chopped
- 15.5 oz/ 440g can fruit salad in natural juice
- 1 cup (250ml) fruit juice (non-filtered apple juice is a good choice)
- 1/2 teaspoon bicarbonate of soda
- 2 cups (300g) self-raising/self-rising flour
Step1
Preheat the oven to moderate (350ºF or 180ºC).
Step2
Prepare a square pan with non-stick spray, oil or baking paper.
Step3
Boil the fruit, dates, undrained fruit salad and juice together for 10 minutes. Allow to cool for 5 minutes.
Step4
Add sifted bicarbonate of soda and flour.
Step5
Pour the mixture into the pan and spread across evenly.
Step6
Bake for 1 hour or until cooked. The cake is cooked when a skewer comes out clean.
Step7
Allow to cool in the pan.
