This is low in fat, easy to make, and nice to have especially on a bitter cold day.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 pound of Ground Beef
  • 1 diced Onion
  • 1 Tblsp. diced fresh Jalapeno Pepper
  • 1 15 ounce Can of Kidney Beans with the liquid
  • 1 14.5 ounce can of diced Tomatoes
  • 1 8 ounce can of Tomato sauce
  • 1 Cup of water
  • 1 Tblsp. of Apple Cider Vinegar
  • 1 Tsp. Salt
  • 1 Tsp. of Chili Powder
  • 1/4 Tsp. of Garlic Powder
  • 1 Bay leaf
  • Cheddar cheese (optional)

Step1
Brown ground beef in a large sauce pan over medium heat. Then drain the fat.
Step2
Add the onions and the pepper and saute` for approx. 2 minutes.
Step3
Add any remaining ingredients (except for the cheese)and simmer for 1 hour ... stirring occasionally.
Step4
Serve one cup per bowl. This will make 4 servings. Garnish with diced onion, whole Jalapeno and Cheddar cheese on top if you'd like.
