How to Make Leftover Chicken Breast Parmesan Subs

Do you have leftover chicken breasts that you just can't find decent recipes for? Well, here's a quick and easy recipe for chicken breasts that your whole family will love!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 2 cups leftover chicken breasts, chopped (ANY kind of leftover chicken works)
  • 1 jar spaghetti sauce
  • 1 can diced tomatoes
  • ½ cup Ranch Salad Dressing
  • ½ cup Italian breadcrumbs
  • ½ tsp. red pepper flakes
  • 1 cup shredded mozzarella cheese
  • 6 small hero rolls
  • 2 tbs. oil.

Step1
Preheat oven to 375 degrees. Prepare sauce by mixing the jarred spaghetti sauce, red pepper flakes and diced tomatoes in a large pot and cook on medium heat for about 15 minutes. While the sauce is cooking, prepare chicken.
Step2
Heat oil in a medium skillet and medium heat. Coat the chicken breast pieces in ranch salad dressing, then pull the pieces through bread crumbs, making sure to coat thoroughly . Place in oil just long enough for the breading to turn brown, this should take approximately 2-3 minutes. Remove chicken pieces from oil and place on a paper towel for a minute or two to allow oil to drain. While the chicken is "degreasing" prepare the rolls.
Step3
Add 2 tbs. sauce to the bottom of each roll, then sprinkle with cheese. Add the chicken to the roll, then add another 4 - 6 tbs. sauce to the chicken and top with shredded mozzarella cheese.
Step4
Bake for about 8 minutes at 375 degrees, then turn the oven to broil for 2 minutes. Serve with French fries and a green salad.

Tips & Warnings

  • Variations: Use any kind of cheese you'd like. This can be done with fresh chicken as well, just up the frying time to 8-10 minutes.
