No backyard picnic or Fourth of July celebration is complete without potato salad. Potato salad is also an ideal side dish for a larger gathering because it is made inexpensively and easily in bulk. Country style potato salad is not fancy, but will please all of your guests' palates and will have them clamoring for more of the side dish, and the recipe. Does this Spark an idea?

Things You'll Need

  • 8 to 10 large potatoes
  • Large pot
  • Colander
  • 1/2 cup mayonnaise
  • 1/4 cup spicy Dijon mustard
  • 1 tsp. dill
  • Large bowl
  • 1/4 cup finely chopped onion
  • 1/4 cup bacon bits
  • 1 tsp. salt

Instructions

      Rinse eight to 10 large potatoes under a cool tap.

      Dice the potatoes into 1/4-inch cubes. Leave the peel on to create a firmer texture.

      Lower the potato cubes into a large pot of boiling water. Allow the potatoes to boil until they are tender, but not falling apart.

      Empty the potato cubes into a colander to remove all of the water.

      Add the potato cubes, 1/2 cup mayonnaise, 1/4 cup spicy Dijon mustard and 1 tsp. dill to a large bowl.

      Stir the ingredients and add 1/4 cup finely diced yellow onion, 1/4 cup bacon bits and 1 tsp. salt.

      Mix all of the ingredients well. Allow the potato salad to chill in the refrigerator for one to two hours to allow all of the ingredients, including the potatoes, to cool completely.

      Serve and enjoy the potato salad within three days.
