How to Cook Swiss Chicken

This is an easy dinner entree that even kids love to eat! It takes maybe 10 minutes to put together and then an hour to cook in the oven.

Instructions

Difficulty: Easy

Things You’ll Need:

  • A square glass or metal cooking dish medium size
  • A package of skinless, boneless chicken (5 or 6 pieces)
  • Swiss cheese (enough to cover all chicken pieces)
  • Can of Cream of Chicken
  • Small can of mushroom pieces
  • 8 oz. of real mayonnaise (NOT Miracle Whip)
  • 1/4 cup of cooking sherry
  • 2 cups of minute rice

Step1
Lay washed chicken pieces in bottom of cooking pan (no oil required). Top chicken pieces with swiss cheese. Set aside.
Step2
In a medium mixing bowl, stir together cream of chicken soup, 8 oz. of Real Mayonnaise, small can of mushrooms, and 1/4 cup of cooking sherry.
Step3
Pour your creamy mixture on top of your swiss cheese and chicken. Put in the oven on 350 degrees and cook for 1 hour or until chicken is no longer pink in the middle. Sometimes it takes up to 1 1/2 hours depending on how thick your chicken pieces are. The creamy sauce will start to get a little dark around the edges and a little on top when the chicken is done. You will not taste anything burnt so do not discard this.
Step4
Just before your chicken is done, cook 2 cups of minute rice. You should have creamy sauce over done chicken. I always served the chicken pieces on top of the rice and added the creamy sauce on top of the chicken pieces. Serve with your favorite vegetables and you have a wonderful meal everyone will enjoy!

Tips & Warnings

  • Dish is very hot coming out of the oven, so be careful serving it up on the plates.
