How to Make Spinach Squares (Spanokopita)

I have made these easy spinach squares for many parties no matter what the weather. They are delicious served warm or cold, winter or spring. I've found them extremely useful for entertaining large gatherings of guests at Christmas, Thanksgiving, Super Bowl parties, Fourth of July, etc. In short, these tasty morsels can be served anytime. This recipe cuts out all the buttering of filo dough without the loss of taste. Enjoy!!!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Large Frypan
  • 13"x9"x2" baking pan or glass casserole dish
  • Measuring cups
  • Glass measuring cup
  • Measuring spoons
  • 1 small onion, finely chopped
  • 1/2 cup butter, melted
  • 2 Tbsp. butter
  • 2 cups biscuit mix
  • 1 lb. feta cheese
  • 2 cups milk
  • 1 tsp. dried dillweed
  • 10 oz. pkg. chopped, thawed, and drained spinach
  • 4 extra large eggs
Step1
Press down firmly on thawed spinach to remove as much water as possible. Drain off and set aside.
Step2
Preheat oven to 350*.
Step3
In fry pan, melt 2 Tbsp. butter.
Step4
Sauté onion until just slightly softened.
Step5
Add drained spinach to fry pan and continue cooking for about 2 minutes, stirring constantly.
Step6
Add dill weed and sauté for another minute.
Step7
Transfer mixture to a large bowl and cool.
Step8
In separate bowl, mix together biscuit mix, eggs and milk. Blend thoroughly.
Step9
Add spinach mixture to the biscuit mixture. Combine all ingredient until well blended.
Step10
Break up feta cheese into a fine crumble and mix into batter.
Step11
Brush a small amount of melted butter on bottom and up sides of 13"x9"x2" baking pan or dish.
Step12
Pour mixture into pan; spread evenly, and pour remaining 1/2 cup butter on top of batter.
Step13
Bake in 350* oven for 35-45 minutes or until golden brown. Cool completely and cut into 1 1/2 inch squares and then in half to make triangles. Makes 50 appetizers.

Tips & Warnings

  • Watch carefully so appetizers won't burn; oven temperatures vary.
