Do you have a craving for sweet potatoes? Do you have that one left over sweet potato from your last recipe? Sweet potatoes are healthy and light and easier than you think to whip up into a quick snack. This is especially perfect if you are cooking for one--although it is also easy to expand this recipe for more people.

Instructions

Things You'll Need:

  • 1 medium to large sweet potato
  • 1 tablespoon of butter
  • 1/2-1 teaspoon of ground cinnamon
  1. Step 1

    Start a pot of water to boil. No need to add anything to the water.

  2. Step 2

    Wash and peel your sweet potato.

  3. Step 3

    Put the sweet potato into the pot of boiling water. Make sure the water completely covers the sweet potato (add more water if needed).

  4. Step 4

    Boil covered or uncovered on medium low heat for about 20 minutes or until potato is tender--you can stick a fork in and out of it easily.

  5. Step 5

    Add butter and cinnamon. Mash with a large fork or potato masher to your desired smoothness.

  6. Step 6

    Eat and enjoy.

Tips & Warnings
  • Cutting the sweet potato up into chunks helps cook the potato faster.
  • This recipe is easy to increase in size if you are cooking it for more than one person.
  • This can be an individual snack or a delicious side dish to chicken or ham.
