How to Prepare Whole Grain Chocolate Chip Cookies

Everyone likes traditional chocolate chip cookies, but there's a way to change a few ingredients to make them more healthy without losing flavor. Everyone can still eat delicious cookies without sacrificing taste. Just don't tell anyone that they are healthy and let your friends and family lavish you with compliments.

Instructions

Things You'll Need:

  • 8 oz. brown sugar
  • 8 oz. Sucanat (Su-Sugar, Ca-Cane, Nat-Natural) found at most health food stores and grocers. It is pure sugar cane juice, before it goes to the processing plant.
  • 1 1/2 cups of Omega 3 margarine
  • 4 organic eggs or 6 egg whites, frothed with a whip
  • 2 teaspoons vanilla
  • 1/2 cup wheat germ
  • 2 tablespoons of non-aluminum baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon sea salt
  • 4 cups of organic quick oats
  • 1-12 ounce package of semi-sweet chocolate chips or Carob
  • 1 cup chopped walnuts
  • 1 cup organic raisin
  • Spatula
  • Wax sheets for cooling
  1. Step 1

    Cream together the oats, margarine, sugars, vanilla, and eggs. Let it set for 15 minutes so the oats can absorb some of the liquids. Meanwhile measure and prepare dry ingredients in another mixing bowl.

    Add the dry mix to the wet mix along with the nuts, wheat germ, and chocolate chips. Stir everything together and cover with a mixing bowl with a damp dish towel and refrigerate for 15 minutes or until the mix is totally chilled.

    Using a 3-ounce ice cream scoop, evenly portion out the cookie dough mixture onto the cookie pan with about two inches between each cookie. Bake for 8 minutes at 180 degrees.

    Do not walk away at this point. The difference between a gooey or a crunch cookie can be just minutes. As soon as the edges begin to brown and the center top still feels underdone, pull them out and let them finish on the cooling rack.

Tips & Warnings
  • If you can, cool the cookie bottom at the same time by utilizing an open rack so air can circulate to bottom equally. Otherwise they may keep cooking on the bottom and become dry.
  • Any time you have an opportunity to purchase eggs from a local source, do so and you will be supporting the local economy, receiving a fresher product, and assisting a family-owned farm.
