In the cold winter nights, this soup will not only heat up your body, it will also replenish your soul. A perfect dish even on its own, it is so filling that nothing more is required.

Instructions

Things You'll Need:

  • 1 cup lentils
  • 3 potatoes-peeled and chopped
  • 2 zucchini
  • 2 carrots
  • 2 celery
  • 3 cloves garlic
  • 1 onion
  • 1 box of pasta
  • grated parmesan to taste
  • 1-2 tablespoons extra virgin olive oil per serving
  1. Step 1

    Soak lentils in water for at least one hour. Instructions can be found on the back of the dried lentils package.

  2. Step 2

    Add the vegetables (whole), lentils and potatoes cut into large pieces to a large pot of boiling water about two quarts of water.

  3. Step 3

    After one and a half to two hours remove all the whole vegetables (they are only to add taste to the broth) leaving only the lentils and potatoes in broth. Add pasta; follow package cooking instructions. Once the pasta is cooked remove from heat and immediately enjoy.

Tips & Warnings
  • Garnish each serving with parmesan and olive oil.
  • Allow broth to cool slightly before adding cheese so it won't stick together.
