Italian vegetable minestrone is delicious on its own and quite healthy and beneficial. Add meat to the soup and you get such a savory broth, One serving just won't be enough.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 2 zucchini
  • 2 carrots
  • 2 celery
  • 1 onion
  • 3 cloves garlic
  • 5 ounces red meat
  • 2 lamb shanks
  • parmesan/prosciutto tortellini
  • 1/2 cup grated parmesan
  • sliver of butter per serving

Step1
Meat Boil the meat (red meat and lamb shanks) for 15 to 20 minutes in a large pot boil meat with just enough water to cover the meat. Once the meat is tender, remove the excess fat that floats to top of water. Then remove the meat and cut up into bit size pieces.
Step2
Wash all the vegetables including garlic and cut them up into large pieces. Then add them to the broth and boil them with the meat pieces for one and a half to two hours.
Step3
Remove all the vegetables and meat. Add the tortellini to the broth and follow package instructions for cooking time. Once the tortellini is about cooked at the meat and vegetables back to the broth. Once the pasta is cooked add the butter and parmesan and serve immediately.

Tips & Warnings

  • Serves four to six people
  • Do not store in the fridge for longer than 4 days.
