How to Make Meatless Italian Sausage

Vegetarians need not be denied of the flavours of hot Italian sausages. While this recipe is certainly not the 'real thing', it's completely meat-free and suitable for vegetarians and vegans.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 cup plus 2 tbsp warm vegetable broth
  • 1/4 cup dry red wine
  • 1 tbsp tomato paste
  • 1 cup textured soy protein granules
  • 1 tsp sesame oil
  • 1/4 lb med-firm mashed tofu
  • 1 tbsp fresh garlic, minced
  • 1/2 tsp crushed fennel seeds
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup pure wheat gluten powder
  1. Step 1

    In a small bowl, mix broth, wine, tomato pasted and sesame oil.

  2. Step 2

    Stir in the textured soy protein granules and allow 5 minutes for them to soak.

  3. Step 3

    Add the tofu, garlic, red pepper, fennel, salt and black pepper.

  4. Step 4

    Spread mixture on a plate and cover. Place in refrigerator to cool.

  5. Step 5

    Once your mixture is cool, add gluten powder and mix well by hand.

  6. Step 6

    Press firmly into 10 thin patties or 14-20 firm links.

  7. Step 7

    Steam over simmering water for 20 minutes using a plate or steam basket.

  8. Step 8

    Any patties you will not be eating should be frozen or refrigerated for future browning and eating.

  9. Step 9

    Brush a non-stick frying pan with a little olive oil or brush the patties/links themselves with oil and grill on both sides until brown.

Tips & Warnings
  • As with any recipe, experiment to get it right for your tastebuds. Consider adding some Italian herbs into your mix.
