Step 1
Not every store, even chain grocery stores, can be expected to always have good coconuts, so you’ll probably have to go to several stores. Often natural foods stores with good produce departments will have good ones when you need them. This is one item you need to allow time to find, so start looking a day or two before you need it.

Be suspicious if they only have a couple in stock—much better to choose from a stack.

Pick up one after another, shaking vigorously. If you don’t hear a pronounced sloshing sound, it’s not a good coconut. You are looking for the maximum amount of juice, so if it doesn’t feel like there is at least a cup of liquid inside moving around freely, place the coconut down and head for the next store on your list.

Step 4
When you find a reasonable stack of coconuts, pick them up one by one until you find one that seems to have more juice than the rest. This is the one you want.

When you get home, make sure the coconut stays cool, so place it in a pantry or at least away from a heating vent. If you are not going to use it within a couple of days, store it in the refrigerator, especially if the weather is warm.
