How to cook Moringa flowers

Cooking nutritious Moringa fresh flowers. Moringa oleifera is known as the Miracle Tree and is widely grown in the tropics.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 2 cups Moringa flowers, cleaned and washed
  • 3 eggs, lightly beaten
  • 6 tomatoes,diced
  • 1 medium onion sliced
  • 1 tablespoon garlic and ginger paste
  • 1-2 medium chillies
  • Sprig of thyme
  • 5 leaves of cilantro,finely cut
  • 2 tablespoon olive oil
  • Salt to taste

Step1
Heat oil in pan and fry onions until transparent.
Step2
Add tomatoes, garlic-ginger paste, parsley, chillies and salt and cook for a few minutes.
Step3
Add beaten eggs, stirring continuously and then add the Moringa flowers and continue to stir and cook for a few more minutes.
Step4
Remove pan from cooker andadd cilantro leaves.
Step5
Serve with rice and a lentil soup.
Step6
Serves 3 persons.

Tips & Warnings

  • Chillies and salt to taste

Here in Mauritius and in other tropical countries Moringa is widely cultivated especially after the virtues of that Miracle tree have been hilighted and disseminated. In fact the leaves and the tender seed pods are widely used in cooking but the flowers are less known to be edible.
