A friend once shared a great secret with me that I love to pass on! You can make terrific tasting peanut butter cookies with only three ingredients! They aren't exactly like your mother's cookies, but are a chewy alternative that is less mess and may be better for you!

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 cup of peanut butter (smooth or chunky -- choose your favorite)
  • 1 cup of sugar
  • 1 egg
  • A medium size mixing bowl
  • A baking sheet
  • Baking spray for baking sheet
  1. Step 1

    Preheat your oven to 350 degrees. Call the kids over because this one is simple and quick! They will love to help!

  2. Step 2

    Mix on cup of peanut butter, one egg, and one cup of sugar in a mixing bowl. Stir well until the peanut butter, sugar, and egg are combined thouroughly.

  3. Step 3

    Drop rounded balls of the mixture onto the baking sheet. Flatten the cookies out with a fork if you want that criss-cross pattern that peanut butter cookies are known for! Be sure to spray the baking sheet with a cooking or baking spray if you need.

Tips & Warnings
  • Smaller cookies will tend to stay together easier. Remember, the flour isn't in this to act as a glue!
  • Let the cookies cool completely before removing them. Again, the glue!
  • Try healthier versions by adding natural peanut butter, sugar substitute for baking, and egg substitute!
  • This recipe makes about a dozen medium sized cookies so it's easy to double or triple -- half the recipe for a quick late night snack for yourself!
  • The sugar and peanut butter can scorch quickly. You may have to experiment to find the best time, temperature, and oven placement for your cookies.
  • Humidity loves these cookies as well. Store in an air tight container if not serving right away.
  • Have milk ready. Nothing is worse than great homemade cookies without milk!
