Put your attacker off balance. Even if your opponent has you in a Muay Thai clench, you still have enough freedom of movement to disrupt your opponent.

Tip your body from one side or the other as your opponent attacks with his knee. If your opponent attacks with his right knee shift your weight to the left so that his center of balance if thrown off.

Shift your body to the right if your opponent attacks from the left. In this manner you will defend a knee attack in kickboxing.

Practice the above moves over and over while sparring. You'll soon be able to sense a knee attack and be able to defend against it.

Work on going on the offensive after you defend a knee attack in kick boxing. Because your opponent's center of balance is thrown off, you can use his time of recovery to throw a knee attack of your own, or reverse the clench or some other move.
