Any type of breading that has to be applied to foods can be one of the messiest jobs in the kitchen. Whether you are deep frying chicken, vegetables or any other item that requires a batter or coating before the frying process, a few tips and techniques will help you make the job cleaner and easier. This is how to bread chicken fried steak.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Pieces of steak
  • Flour
  • 1 egg
  • 1/4 cup milk
  • Breading
  • 3 long shallow dishes for dredging

Step1
Prepare the dishes to bread the steaks. Place 1 dish next to the other on the counter. In the first dish place about 1/4 inch deep of sifted flour and in the other dish mix together 1 egg and 1/4 cup of milk. In the final shallow dish, place your breading mix. This can be cracker crumbs, corn meal, flour or breadcrumbs or any combination of the items listed. Season the breading well.
Step2
Take the piece of steak and, using a frying pan or heavy rolling pin, beat the piece of steak until it flattens out and is very thin. By placing the steak between 2 pieces of plastic wrap or wax paper, you can minimize the mess and splatter of the meat while pounding.
Step3
Dust the piece of prepared steak well in the pan containing flour. Just place the piece of steak in the dish and turn the steak a few times.
Step4
Pick up the steak with the right hand and slip it into the second dish with the egg wash. Turn the steak over once or twice, then with the right hand pick up the piece of steak and drop it in the breading mixture. Coat the steak well with the breading mixture.
Step5
Use your left hand, lift the steak out, and place on a clean plate to rest until all pieces of steak are ready to be cooked. When you have breaded all the pieces and the oil is heated in the pot you can gently add the pieces of breaded steak to the pan for frying.

Tips & Warnings

  • A way to tell if the oil is hot enough to fry the steaks in is to place a dash of flour in the oil and see if it sizzles and bubbles. If it does, the oil is at the right temperature.
  • Be very careful placing items in hot oil. If the oil splashes, it can cause a fire or burn your skin.
