How to Knead Challah Bread Dough by Hand

Knead your challah dough to develop the gluten so the bread can fully rise. Knead your dough well to mix the ingredients and force air bubbles out of the dough. Create dough that rises and expands by hand kneading the dough before baking it in the oven.

Things You'll Need:

  • Cutting board
  • Flour
  1. Step 1

    Prepare your kneading surface. Pour a generous amount of flour on a clean cutting board or other clean work surface. Cover your hands with flour. Use a spoon to scrape the dough from the bowl and place the challah dough on the floured work surface.

  2. Step 2

    Turn the dough over on the work surface to cover it with flour. Push the challah dough into a flat circular shape. Fold the dough in half. Push the dough down in the middle. Push the dough into a circular shape, fold it, push it and knead it again.

  3. Step 3

    Use the heel of your hand to push the dough while kneading. Add flour to the challah to create a smooth, firm, flexible dough. Work the flour into the dough with your hands. Knead the challah dough by hand for 8 to 10 minutes.

  4. Step 4

    Clean excess dough from your work surface for a smooth dough finish. Use a scraping tool if necessary. Throw away excess dough. The dough needs to be firm yet supple at the end of the 10 minute knead. Add more flour if the dough is still moist. Form the dough into a large mound and set it aside to rise.

  • Set a timer for 10 minutes to help you know when to stop kneading the dough.
