Step 1
Knead dough until the desired consistency, adding flour as you need it. The final dough texture should be satiny and smooth. It shouldn't stick to your fingers, and it should be firm.

Form the dough into a large ball with your hands.

Place a tiny amount of oil in the bottom of a bowl. It doesn't matter which type of oil or bowl you use, but glass or ceramic bowls are thought to keep the dough at an even temperature. Remember, however, that olive oil or any other specialty oil may have flavor.

Add the dough to the bowl, and roll the ball around to cover it with oil. This locks in moisture so the bread doesn't dry out or form a crust at the top.

Cover the bowl containing the dough with plastic wrap.

Place a towel over the plastic wrapped bowl. Terry cloth works best because it is heavy and traps heat, to allow the dough to rise.

Put the bowl in a warm place, to rise, for about an hour. You should aim to let your dough rise at a temperature between 75 and 85 degrees. It will also help if it rises where there isn't a draft. The bread will double in size when it has risen correctly.
