How to Fry Fish Over a Campfire

Build a campfire for cooking. Use seasoned, dry wood to create a fire that stays hot and burns cleanly. Many public campgrounds supply firewood, so if you don't have access to any, call ahead about firewood availability.

Place coals on the fire and heat them until they're mostly white. Rake the coals to stack them and achieve the size flame you want. Position your cooking grill on rocks or green logs on top of the coals.

Fillet the fish before you cook it. Carefully dry each fillet because batter sticks better on dry fish.

Place in a small bowl ¾ cup beer and 1 cup of buttermilk pancake mix. Blend it together with a fork, then whip the batter until it's smooth like heavy cream. Dip the dried fillets into the beer batter.

Heat oil in a skillet on your campfire grill, and place your fish fillets in the skillet. Fry them until they're golden brown on the outside. When ready, the fish flakes easily with a fork.

Serve your fried fish garnished with parsley, dill and lemon slices, and mix up a tartar sauce to eat along with the fish.
