Things You'll Need:
- Tomato sauce
- Vinegar
- Brown sugar
- Chicken parts
- Pork ribs
- Pecan or mesquite wood

Step 1
Make the sauce that will be mopped on the smoking meat by mixing one part vinegar to three parts tomato sauce and three parts brown sugar. This will produce the sweet sticky barbecue sauce that identifies Kansas City style barbecue.

Buy chicken parts or pork ribs to make Kansas City Style barbecue. The sweet sauce is not typically used on beef and is much better on pork or chicken.

Wash meats thoroughly and season with salt and pepper. If you want a little more spice, use a bit of cayenne pepper in the seasoning process.

Build a fire in a smoker using pecan or mesquite wood. Pecan wood will provide a sweet taste and mesquite wood will provide a smoky taste, so select the type of wood that'll produce the taste you want.

Cook meats at a temperature of 250 degrees for as many as 10 to 12 hours. Keep the fire stoked with wood and the temperature of the smoker consistent, checking your thermometer regularly, for the best Kansas City style barbecue.

Brush the signature Kansas City style sauce on the meat during the last two hours of cooking to develop a sweet and sticky glaze to hold in the meat's juices and also add flavor.
