How to Grill Onions

    • Medium or large onions, preferably a sweet variety such as Vidalia
    • Aluminum foil
    • Salt and pepper to taste
    • Butter

        Peel the onions. Rinse to remove excess skin, and pat dry.

        Slice off 1/4 inch from the stem end of each onion to make a stable base. Set each onion, on its stem end, on a square of aluminum foil large enough to wrap the whole onion.

        Cut through each onion from the top almost to the stem end, slicing it into four wedges still attached at the bottom. Spread the wedges open slightly, and fill the center of each onion with a tablespoon of butter.

        Sprinkle each onion with salt and pepper, and enclose it in foil. Poke several holes in the top of each foil packet with a fork.

        Place the foil packets on a charcoal or gas grill heated to medium. Grill 25 to 30 minutes.

        Unfold the packets carefully to check for doneness; the edges of the onion wedges should be browned. Taste for seasoning, and add salt and pepper if desired. Serve as a side dish or as a topping for grilled steaks, chicken or fish.
