Measure the blade for an accurate fit. The optimum length of a boning knife blade is between 5 and 6 inches. Traditionally, the tip of the blade features a beveled edge but new styles are showing up on the market with a straight tip.

Read the manufacturer's enclosed detail sheet in order to determine what material went into making the blade. The highest-rated boning knives feature a high carbon stainless steel blade that will retain its sharpness.

Look for a balanced handle that feels comfortable. Your hand should grip the knife close to the blade for the greatest control when cutting. The handle should feature a secure attachment to the knife.

Bend the blade if you're looking for a knife to cut poultry. While stiff blades are good for beef and pork, cutting with a slightly flexible blade when preparing chicken allows you to cut around the flexible cartilage and through joints. In addition, cutting fish requires a very flexible boning knife.

Compare prices on boning knifes. Although a good knife is an investment that will provide years of service when chosen wisely, there are many brands featuring quality blades and handles in a range of prices.

Buy online. Not only are prices on most brands cheaper, but many vendors offer an online rating system, allowing consumers to read the reviews of other buyers before they make a purchase (see Resources below).
