Marinating is an excellent way to make your fish even more delicious when you BBQ. A quick and easy lemon-pepper marinade adds to the natural flavor of the fish and can help keep it moist even after grilling. Does this Spark an idea?
Things You'll Need
- 3 to 4 lbs. of fish
- 1/3 cup olive oil
- 6 tbsp. lemon juice
- 1 1/2 tsp. sugar
- 1 1/4 tsp. pepper
- 1 tsp. salt
- 1 tbsp. dried parsley
Instructions
-
-
1
Prepare your fish for the BBQ by gutting it and trimming away excess fat. It is possible to grill anything from a whole fish to fish fillets.
-
2
Mix all your ingredients, including lemon juice, olive oil, sugar and spices, in a bowl. It is recommended that you avoid using aluminum, iron or copper pans or bowls, as many marinades can cause them to become discolored.

3
Select a container in which you can marinate your fish. Any type of bowl or pan (except aluminum, iron or copper) is fine for marinating. Another easy way to marinate is by using a high-quality, zip-sealing plastic bag. Using a plastic bag will require you to use less of the marinating mix.
-
4
Place the fish into the container to be used for marinating or into the bowl that was used previously for mixing the marinade. If you decide to use a plastic bag, be sure to place it inside a clean bowl or pan to guard against leaks.
-
5
Pour enough marinade into the bowl, pan or plastic bag to completely cover the fish.
-
6
Seal the plastic bag tightly or place plastic wrap securely over the top of the container.
-
7
Chill the fish in the fridge for 30 minutes to 1 hour to allow for full absorption.
-
8
Transfer the fish from the marinating container to the BBQ.

Tips & Warnings
Save the leftover marinade and brush it on the fish with a basting brush throughout the grilling process.
Seal any leftover marinade in a jar or plastic container and refrigerate for use later. It will keep for about 2 weeks.
For a simple, one-ingredient marinade that blends well with the flavors of fish, marinate with Italian dressing.
Do not baste your fish with leftover liquid from the container in which it was marinated. It can contain bacteria from the raw fish which could cause food poisoning.
When preparing, marinating and grilling fish, take precautions to avoid food poisoning by cooking the fish thoroughly and cleaning surfaces that came in contact with the raw fish.
