Step1
Use a 12 oz to pound size empty coffee can (or casserole dish)for the mold.
Step2
Place the sugar and one tablespoon cold water (or left over coffee) in a small pot.
- Use a low heat.
- Let the sugar melt until it is a reduced to a syrup.
Step3
Using a pot holder or mitt, take the sugar syrup which is now caramelized and place pour it into the coffee can - set aside.
Note: The sugar will harden but that is fine. It will melt again once baked. Also, this makes one large molded dessert instead of individual portions.
Step4
Preheat oven to 350.
Step5
Separate the eggs - you will use the yokes only. (Save the whites and make a facial mask or use for egg white omelets.)
- In a large bowl, combine the 4 egg yolks
- Add 1 can Eagle Brand condensed milk
- 1 1/2 cups water
- Add 2 tablespoons real vanilla extract
- Whisk together until well blended and a little frothy.
Step6
- Fill a shallow pan with water to the height of the flan.
- Place the coffee can into the shallow pan.
- Bake at 350 until the flan custard is set probably about 45 minutes. Check after 30 minutes - you will see a bit of brown froth around the edges of the flan and it will have a custardy look.
Step7
Once done, carefully remove from the oven.
- Insert a knife around the flan
- Invert the coffee can, and slide it onto a plate or into a shallow dish.
- Wait until cool, serve and enjoy!
Note: Scoop flan into serving dishes and spoon some liquid on top.
