How to make a tasty simple Curry Chicken
Curried chicken is quick and easy and adds a bit of Indian flair to your repertoire. This recipe has a bit of kick to it so, if you aren't fond of hot or spicy dishes, you may want to use less curry powder. This dish is best served on a bed of basmati rice and with a glass of chilled Riesling. Follow it with a simple dessert -- a scoop of vanilla ice cream complements the spice of the meal. Things You'll Need
- 3 skinless boneless chicken breasts, cut into strips
- 1 cup coconut milk
- 1/4 cup extra virgin olive oil
- 3 tbsp. curry powder
- 1 cup of cubed potatoes
- 1 medium onion
- 1 green bell pepper, chopped
- 3 garlic cloves
- 2 tbsp. fresh grated ginger
- 1 tbsp. oyster sauce
- Salt and pepper to taste
- Wooden spoon
- Large frying pan

Saute garlic cloves and onion in extra virgin olive oil over medium heat until tender.

Add chicken strips and continue cooking for 10 minutes or until the chicken is white all the way through.

Add coconut milk and stir vigorously for one minute.

Add in green pepper, potatoes and ginger. Cook for two more minutes.

Bring the mixture to a boil and add in curry powder.

Lower the heat and simmer uncovered for five minutes.

Remove from heat and stir in oyster sauce.

Tips & Warnings
Although basmati rice is suggested, this dish will taste great on any type of steamed rice.
Reduce the amount of ginger or curry powder if the curry is too spicy.
