It does not matter which type of smoker or grill you use, but the first thing is to build your fire and allow it to burn down to red hot coals. By now you have already thawed, basted or rubbed and prepared your meat, so proceed to lay it on the grill and close the lid. Next, have a beer, kiss the wife and wait, maintaining your fire and watching the meat and turning it when needed.

When the neat is starting to brown as much as you like it, remove it from the grill and using the heavy duty foil, completely wrap the meat and place it back onto the grill and close the lid. In maybe two more beers or perhaps forty-five minutes, and if you have followed these simple instructions the roast or turkey or chicken will be done to a mouth watering taste. You can't fail to impress your neighbors and friends with your cooking ability.
