How to Make a French Vegetable Soup

An elderly French woman, who was a very good friend of mine, showed me how to make this French vegetable soup, often known in France as potage. It is perfect for those cold winter evenings. If you would like to make a traditional French vegetable soup, follow these steps.

Instructions

Things You'll Need:

  • Carrots
  • Onions
  • Leeks
  • Potatoes
  • Garlic
  • Cloves
  1. Step 1

    Cut carrots into slices and place into a large saucepan.

  2. Step 2

    Chop onions and garlic and place into saucepan.

  3. Step 3

    Chop potatoes and leeks and also place into saucepan. You can also add any other vegetables that you may have on hand, until the saucepan is 3/4 full.

  4. Step 4

    Add water until the saucepan is full and bring to the boil.

  5. Step 5

    Allow the vegetables and water to simmer.

  6. Step 6

    After an hour, add a handful of cloves.

  7. Step 7

    After two hours, blend the soup.

  8. Step 8

    Serve the soup and add either a large portion of creme fraiche or a large portion of camembert to give it a creamy taste.
