Select your onions with care. Try to choose ones that have not been bruised or contain soft spots. Cut them into layers and then separate the rings. Some onions have a clear protective layer over each level. Remove this if it is in the way.
Step2
Lay the onions into the batter and swirl around to pick up a thick coating of the mix. You could add flavored bread crumbs if you like.
Step3
Drop the rings into the frying oil and flip them as they start to float. Cook each side to a golden crisp.
Step4
Remove them from the oil with a slotted spoon and place on a paper towel to drain.
Tips & Warnings
Give plenty of options for dipping sauce.
Never leave hot grease unattended. Even if you turn off the heat it can still pop. Move the pan over to a burner that is cool.

I can't believe the recipe calls for so much baking powder and no flour! "Who'd a thunk it?" I LOVE onion rings so I just might try this one... Thanks for sharing.
