Chayote is a lovely green pear-shaped fruit that grows on a climbing vine with leaves similar to those of a cucumber. The fruit contains a single soft flat seed that is edible. Native to Guatemala they are grown commercially in Florida. Guatemalan varieties are often covered with deep wrinkles while those grown in Florida are generally smooth. They are all delicious and can be served in a variety of ways. I truly prefer them simply cooked in a pan in a small amount of Canola oil, with course salt and pepper. The result is a sweet and salty flavor combination that is truly indescribable and truly delicious. Other ways to serve them are creamed, baked, boiled and pickled. They are also good raw and thinly sliced in salads.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 3-4 chayote washed and cut into 1-1 1/4 inch cubes
  • Wok type or other frying pan
  • Canola oil
  • Salt ( preferably kosher) and fresh or course ground pepper

Step1
Chopping Chayote Wash Chayote and then cut into pieces 1 - 1 1/4 inches square.
Step2
Heat the Wok over medium to medium high heat. Add canola oil to completely coat the bottom of the pan.
Step3
After oil is heated, add chopped Chayote. Cook, stirring occasionally 7 to 12 minutes or until Chayote begins to brown lightly around the edges. It should just begin to brown nicely on the outside and soften a bit on the inside. Do not over cook!
Step4
Finshed product: Delicious! Season with salt and pepper and serve.

Tips & Warnings

  • The secret is to make sure your oil is heated before adding Chayote and then to not over cook!
  • You may become addicted to this lovely fruit!
