Chayote is a lovely green pear-shaped fruit that grows on a climbing vine with leaves similar to those of a cucumber. The fruit contains a single soft flat seed that is edible. Native to Guatemala they are grown commercially in Florida. Guatemalan varieties are often covered with deep wrinkles while those grown in Florida are generally smooth. They are all delicious and can be served in a variety of ways. I truly prefer them simply cooked in a pan in a small amount of Canola oil, with course salt and pepper. The result is a sweet and salty flavor combination that is truly indescribable and truly delicious. Other ways to serve them are creamed, baked, boiled and pickled. They are also good raw and thinly sliced in salads.
