Things You’ll Need:
- 4 chicken cutlets (thick)
- toothpicks (about 20)
- 8 slices of ham
- 8 slices of fresh mozzerella
- 2 table spoons of olive oil
- 1/2 stick of butter
- 1/2 cup chicken stock
- 1/2 cup of white wine
- baking pan
- fresh parsley-about 2 spriggs
- 4 eggs
- breadcrumbs (about 4 palmfulls
Step1
You can get bored with chicken very quickly, but this is a dish that I guarantee will make your guests coming back for more! Make sure you have all your ingredients. Don't you hate when you think you have it all and you are up to the 3rd step of making the dish and realize, there aren't enough eggs or milk or you are missing the main ingredient, like the meat!
Step2
Relax, cooking can be very therapeutic. I believe the more calm you are, the better the meal turns out.
Take your cutlets and lay them on a plate. Sprinkle salt and pepper to taste. Remember to season both sides. Set your oven to 350 degrees.
beat up the eggs in a large bowl. Add breadcrumbs to a large bowl as well. Now, dip each cutlet in the eggs and than transfer to a bowl of breadcrumbs. Place each cutlet in the baking dish.
Now take a slice or two of your ham, lay in over the cutlet, do the same with the mozzarella. Now roll the cutlet from one end to the other and took pick the sides to keep in place. Repeat with each cutlet.
Step3
Get your chicken stock and slowly pour into the bottom of the backing dish, NOT on top of the chicken. Do the same with the wine.
Than, take your butter and cut into pats, dab onto each cutlet. Bake for an hour checking it every 15 minutes to make sure butter isn't burning, if it is, add more wine or stock. When chicken is done, take out with tongs or spatula and set it on a serving dish. This dish is best hot and served with vegetables such as asparagus, string beans or broccoli.
