How to Amaze your family with Chicken & Dumplin's

Your family will be amazed by your cooking! A simple twist on an old favorite will have them begging for more! You can cook it on the stove or in the crock pot. Best of all- it is simple!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 4 boneless skinless chicken breasts
  • 2 cans of family size Cream of Chicken Soup (Campbell's)
  • Jiffy baking mix
  • 2 chicken boullion cubes
  • salt and pepper
  • Large pot or crock pot

Step1
I will give you directions for stove top cooking and add the crock pot variations at the end of each step.
STOVE TOP: First you will need 4 boneless and skinless chicken breasts. (Frozen or thawed) Place in the large pot and then fill about 3/4 full with water. Add a few shakes of salt (you could also use sea salt). Turn burner on medium high heat.
CROCK POT VARIATION: Place 4 boneless/skinless chicken breasts in crock pot filled half way with water. Add dash of salt, 2 chicken bouillon cubes, 2 cans of Campbells Cream of Chicken Soup, and cover with lid. Turn crock pot on 8 hour setting.
Step2
STOVE TOP: Bring chicken breasts to a boil. Add 2 chicken bouillon cubes. Let chicken boil until the broth is reduced to about half. (This creates a richer broth). Cooking time will vary - but this step usually takes about an hour.
CROCK POT: do nothing- you are probably at work, or running errands while your broth is cooking. (See, this is easy)
Step3
STOVE TOP: When broth has reduced down and chicken is tender and falling apart- add 2 cans of Campbells Family size Cream of Chicken soup. Stir until blended. Return to boiling (approximately 10 minutes). Stir occasionally.
CROCK POT: still waiting for you to come home from work... happily cooking away....
Step4
STOVE TOP: In a large mixing bowl mix 2 cups of Jiffy baking mix and 2/3 cup of milk. Blend. This will be a sticky gooey mess when done.
CROCK POT: Assuming you are home now- you can follow the stove top step for making the dumplings.
Step5
STOVE TOP: reduce heat to medium. Stir soup mixture. Measure out dumpling mix with a tablespoon and drop into soup. Dumplings will sink- then rise to top. Continue until all dumplings are added. Return to almost boiling and cook for an additional 10 minutes. Then turn the dumplings over and cook for another 5-10 minutes. (You may want to remove a dumpling to check for done-ness. The inside should be flaky when they are done).
CROCK POT: Follow the above step for stove top- put cover back on crock pot after you have dropped in dumpling mix. This helps retain the heat and lets dumpling cook faster. Cooking time will be about the same with the crock pot.
Step6
Start dishing out and serving. This recipe will serve between 4-8 people (depending on appetites).This is a favorite in our house- and I am sure it will be in yours too.
Other options- instead of Dumplings you can add wide egg noodles.

Tips & Warnings

  • Stove top version is better to make when you have time and aren't rushed to put dinner on the table.
  • Crock pot version takes little effort from you and gets great results as well.
  • This recipe is easy to increase for bigger crowds, or reduce for smaller gatherings.
  • CAUTION: Those who eat this may decide you are the worlds best cook.
  • You will gain a following of people who love your cooking and can't wait to try your next amazing dish.
  • People may ask you to run away with them and start a restaurant serving only chicken and dumplings. Don't be fooled- you will be doing all the work!
  • You may end up spending more quality time with your family.
