Here is a delicious chocolate chip cookie recipe. It's a Bake-off Contest Winner!

Difficulty: Easy
Instructions

Things You'll Need:

  • 3 1/4 plus 1/8 cup flour
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 3/4 c brown sugar
  • 3/4 c white sugar
  • 3/4 c brown and white sugar (half and half)
  • 1 1/2 shortening (make some of it butter)
  • 3 eggs
  • 1 tsp vanilla extract
  • 12 oz bag chocolate chips or chunks
  • 1/2 c chopped pecans or walnuts, if desired
  • Pampered Chef medium cookie dough scoop
  • Pampered Chef round baking stone
  1. Step 1

Preheat oven to 375 F. In a medium-sized mixing bowl, sift together the flour, salt and soda. Set aside.

  2. Step 2

In a large mixing bowl, cream sugars with shortening/butter. Beat in the eggs and vanilla.

  3. Step 3

Add half of the flour mixture to the sugar/shortening mixture. When that is well-blended, stir in the rest of the flour mixture. The cookie dough will be very thick, and must be mixed by hand or the dough hook of your stand mixer. Add chocolate chips and nuts.

  4. Step 4

Scoop cookie dough, dropping each about two inches apart onto the baking stone or an ungreased cookie sheet. Bake in preheated oven for 10-12 minutes, depending on how crisp you want the cookies.

  5. Step 5

Allow the cookies to cool slightly before removing them from the baking stone. Cool completely on a cooling rack or brown paper. Store in airtight container. Makes five dozen, enough to share!

Tips & Warnings
  • I love my scoop from Pampered Chef! It resembles an icecream scoop, and they come in three sizes. (Size medium is just right for these cookies.) The dough scoops out easily to make consistently round cookies.
  • I also love the way Pampered Chef stoneware treats my cookies as they bake. My baked goodies come out perfectly (not overly) browned on bottom.
  • Use whole wheat for up to half of your flour to make healthier cookies. It will not affect the appearance nor the taste.
