Things You'll Need:
- salmon filet
- aluminum foil
- olive oil
- white wine or water
- garlic salt
- scallions (optional)
- lemon slices
-
Step 1
Preheat oven or grill to 375 degrees.
Rinse salmon filet(s) in cold water and pat dry. -
Step 2
Place large piece of aluminum foil on counter (the piece should be 2-3 times the width of the salmon. Pour 2-3 tablespoons olive oil onto center area of the foil. Place salmon onto center of foil.
-
Step 3
Drizzle salmon with olive oil and sprinkle with garlic salt. Place green onions and lemon slices on top of salmon. Fold aluminum foil up and prior to closing completely, pour 1/2 cup white wine or water around the salmon. Completely close the foil, but not too tightly. There should be no openings, but leave some space for the poaching process.
-
Step 4
Place foil in oven or on grill (off heat) for approximately 18-20 minutes. Remove from cooking and CAREFULLY open the foil at the top using kitchen scissors. There will be a significant amount of steam that will escape that can burn you if you're not careful!!
Place the salmon on plate for serving and spoon remaining cooking juices over. Great with rice and vegetables.
