Keep in mind beer batter is not just good for fish.
I use this recipe for mushroom caps, onion rings, vegetables and for cheese.
Be creative

Difficulty: Easy
Instructions

Things You'll Need:

  • Beer (any brand I perer Blue but any lager will do
  • flour
  • eggs (seperate yolk s from whites)
  • pinch of salt and pepper to taste
  • pinch ofgarlic salt (or powder) (optional)
  • pinch of Onion salt (optional)
  • tops of green onions (or chives) chopped fine
  • parsley (optional)
  • parmesian cheese (shaker type like for spaghetti)
  • any fish fillet
  1. Step 1

Pour 1 Cup of flour and 1 cup of beer in a large bowl. Stir until the batter becomes smooth. Achieve the consistency of pancake batter and set aside.

  2. Step 2

Seperate eggs. Add yolks to batter Set aside egg whites

  3. Step 3

Add rest of desired spices and onions(chives) to mixture. Stir

  4. Step 4

Add Parmesan cheese (approx 1 tablespoon) I like more than that

  5. Step 5

Mix everything together except egg whites while still maitaning the consistancy of pancake batter

  6. Step 6

Beat egg whites until firm(stand in peaks) Fold egg whites carefully into batter with a large spoon

  7. Step 7

Make sure oil is hot. So when you sprinkle a bit of water on it, it sizzles. Need enough to cover whatever you are deep frying

  8. Step 8

Dip fish into beer batter covering entirely. Deep fry until golden brown

Tips & Warnings
  • I use canola oil for deep frying
  • This recipe is great for wild game too. I make chicken fingers out partridge and wow does it taste great
  • Perfect for deep frying seafood or crunchy vegetables like zucchini and cauliflower
  • Please don't try this recipe as it is addicting and the best I have ever tried.
  • Can switch the spices around for a total different flavour. I have added roast beef spice and/or french fry spice as well. Goes great with onion rings and mushroom caps.
  • Sure beats KFC chicken any day

on 1/23/2008 One cup of beer goes in the recipe - may I safely guess what you did with the remaining four ounces?
I hope it was cold beer! (-;
