Make Southwestern Vegetable Soup

This is a great, easy recipe for a vegetable soup with a Southwestern flair!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 can green beans
  • 1 can whole kernel corn
  • 1 can peas and carrots
  • 2 medium potatoes, peeled and cut into cubes
  • 1 medium onion, chopped
  • 1 lb. ground hamburger meat (or turkey)
  • 1 packet of taco seasoning
  • 2 cans of crushed tomatoes
  1. Step 1

    Brown the ground beef in a skillet and add the onion when the meat is about half cooked. Drain. If you would prefer a vegetarian soup (which is still wonderful and flavorful) substitute a can of kidney beans for the meat. Just brown the onion in a little butter in a skillet.

  2. Step 2

    Transfer meat and fried onion to a large pot. Add tomatoes and taco seasoning. Once the seasoning is mixed into the soup well, add all the other vegetables. I suggest using canned vegetables - don't drain the vegetables though. If you prefer frozen vegetables, they will work just as well. Just buy a couple of bags of mixed vegetables.

  3. Step 3

    Boil the soup until the potatoes are soft, stirring periodically. Normally all other vegetables will be done as well by then. Serve and enjoy!

Tips & Warnings
  • add black pepper, jalapeños, or red pepper if you would like a little more spice
  • if the soup looks too thick, add water or chicken broth to it
  • if you want a creamier soup, add a little flour along with the taco seasoning while you are cooking or put a dollop of sour cream on it when you serve it
  • Do not let all of the liquid cook out of soup - it will burn! Add water or chicken broth as needed.
