Difficulty: Moderately Easy
Things You’ll Need:
- 1 1/2 # pkg. of chicken thighs.
- 1 med sized onion
- 2 qts. water
- 2 carrots
- 1 celery stalk
- 1/2 tsp crushed sage
- 1/2 tsp crushed thyme
- 2 TBS. minced garlic
- 4 chicken bullion cubes
- 2 Cups Four
- 2 med-eggs
- 1/3 Cup Milk
- Sea Salt
- Ground pepper
Step1
Add the chicken, spices, and herbs except for the garlic to boiling water.

Then chop up the vegetables.
Step3
After the soup has boiled for 20 minutes remove the pot from heat and debone the chicken. Then add the chicken & vegetables to the soup and cook for another 20 minutes.
Step4
Now it's time to make the noodles. In med size bowl mix the flour and salt together. In another bowl whisk the eggs and milk together, then in the flour mix form a depression in the middle and add the eggs and milk and mixing well. Then roll the dough out until it's approx. 1/8 " thick and let it set for about 2o minutes.
Step5
Slice the dough with a sharp knife into strips 3/8 of an inch wide and drop one at a time into the simmering soup and cook until tender approx. 15-20 minutes.
Step6

Add the garlic during the last five minutes of cooking.
