How to Make Ibishyimbo - Kidney Beans with Tomatoes and Sunflower Seeds

This dish is truly delicious and provides a great source of protein for vegetarians. This is a typical Rwandan dish.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 2 tbps oil
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 1/2 cup sunflower seeds, ground
  • 4 large tomatoes, peeled and crushed
  • 1 tbsp basil
  • 1 tsp oregano
  • 1 tbsp paprika
  • 1/2 tsp hot chili pepper
  • 1 1/2 / (10 oz / 540 ml can) cups kidney beans, rinsed and drained
  • 3 tbsp miso previously diluted in 2 tbsp hot water

Step1
Heat the oil in a pan. Cook the onion and garlic for two minutes.
Step2
Add the ground sunflower seeds and mix. Cook for three minutes.
Step3
Add the tomatoes, basil, oregano, paprika, chili pepper and beans. Bring everything to a boil.
Step4
Reduce the heat once boiled. Allow to simmer for about 10 minutes.
Step5
Remove from heat. Add the miso.
Step6
Serve hot. Suggestions for foods that go well with this dish are under "Tips".

Tips & Warnings

  • This dish goes well with plantains, pasta, potatoes, spinach, rice, bulgur, quinoa and pearl barley. It's a good idea to cook a grain to place the ibishyimbo on and then to add some greens or plantains on one side.
