Just a few vegetables, some meat if you like, some seitan if not. A little bit of heat and oil and viola! A meal good for anytime, and anyplace. Scramble some eggs in and it could even be called breakfast.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 oz sesame, vegetable, or olive oil
  • 1 clove chopped garlic
  • 1 cup chopped white mushroms
  • 3/4 cup chopped carrots
  • 1/2 onion julienned
  • 1 cup snap peas, or green beans
  • 2 cups spinach
  1. Step 1

    Heat oil in a skillet, and add garlic when heated. Sauteé 2 minutes, and add onions. Sautueé 5 minutes over medium heat. Stir Constantly

  2. Step 2

    Optional-
    If using meats, fish or vegetarian options add now, and cook until half way done.

  3. Step 3

    Add carrots first, and then mushrooms a minute later. After about 3 minutes add snow peas, or green beans. Finally wilt the spinach as the stir-fry comes to a finish.

Tips & Warnings
  • If adding meat such as beef, chicken, or pork add turmeric or saffron
  • If adding seitan or tofu use parsley, and thyme
  • If adding to eggs or shellfish use dill, or lemongrass
  • Always cook meats to proper temperatures failing to do so may result in illness.
