How to Prepare Sweet and Sour Black-Eyed Peas

Mom did wonders with peas and beans back in the 1970s.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 7 ½ cups of black-eyed peas
  • 2 cups of carrots, diced and cooked
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 small can of pimiento, chopped
  • 1 clove of garlic, minced
  • ¾ cup of sugar
  • ¾ cup of vinegar
  • 2/3 cup of salad oil
  • 5 teaspoons of Worcestershire sauce
  • 1 can of tomato soup
  1. Step 1

    Dice and cook the carrots, mince the garlic and chop the onion, bell pepper and pimiento.

  2. Step 2

    Mix the sugar, vinegar, oil, Worcestershire sauce and tomato soup together and blend it all well in one bowl.

  3. Step 3

    Mix the black-eyed peas, carrots, onion, bell pepper, pimiento and garlic well in another bowl.

  4. Step 4

    Mix the contents of the two bowls together.

  5. Step 5

    Refrigerate and serve either hot or cold.
