How to Prepare Carolina Corn Shrimp Pie

An old Southern main dish.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 2 cups of creamed corn
  • 2 pounds of shrimp
  • crackers
  • hot pepper sauce
  • ½ cup of shallots
  • ¼ cup of unsalted butter
  • 3 cups of milk
  • sea salt
  • freshly-ground pepper
  • 1 teaspoon of Worcestershire sauce
  • 1 teaspoon of Dijon mustard
  • 1 bell pepper
  • 3 eggs
  • ½ cup of celery
Step1
Peel, de-vein, wash, boil and drain the shrimp in a sieve.
Step2
Grind the black pepper and mince the shallots and celery. Beat the eggs.
Step3
Chop the stem off the bell pepper, core the pepper, slice it in half, remove the seeds and inner membrane and chop the pepper roughly.
Step4
Crumble some of the crackers and use the still-intact crackers to carpet a casserole dish.
Step5
Stir the eggs, shrimp, corn, shallots, milk, celery and bell pepper. Season with the salt, pepper, Worcestershire sauce, hot pepper sauce and mustard and stir.
Step6
Spoon all this into the casserole dish. Shake the cracker crumbs over the top, then add little pats of butter.
Step7
Bake at 350 for 1 hour.
