How to Prepare Asparagus and Shrimp Salad

Things You'll Need:

  • ½ pound of shrimp
  • 1 bunch of asparagus
  • 1 tablespoon of capers
  • 1 head of Bibb lettuce
  • 1 teaspoon of Dijon mustard
  • ¼ cup of yogurt
  • sea salt
  • freshly-ground black pepper
  • 1 tablespoon of parsley
  • 1 tablespoon of oregano
  • dash of cayenne pepper
  1. Step 1

    Peel the shrimp, de-vein them with a sharp knife, then wash and boil them and drain them in a sieve.

  2. Step 2

    Grind the black pepper.

  3. Step 3

    Chop the tips off the asparagus, boil them until they go limp, drain them and dump them in a bowl with the shrimp.

  4. Step 4

    Combine the capers, mustard, yogurt, salt, black pepper, parsley, oregano and cayenne pepper and mix well.

  5. Step 5

    Drizzle the dressing over the shrimp and asparagus.

  6. Step 6

    Peel the leaves off the lettuce and spread them over the salad plates, then spoon the shrimp and asparagus onto that.
